Evan Eppler shares his favorite Strawberry Rhubarb Pie recipe!

My father ran a bakery out of my childhood home. This recipe was a summer time favorite in our small village. It always tastes better with local ingredients like the ones featured here! Though likely derived from a number of New England recipe books, this one is credited to Kryndlemans Fine Baked Goods of Strafford, Vermont.

Crust

3 Cups Aurora Mills Flour

1/2 Tablespoon salt

1 Cup Crisco or other shortener

9+ Tablespoons cold water

Sift flour and salt into a large bowl. Cut in Crisco just to the point where no large chunks of shortening remain (Encourages a flaky crust). Sprinkle cold water over dough one tablespoon at a time tossing pastry with a fork to mix. Use only enough water so that pastry binds together in a clump but is not sticky wet when handled. Form round into a ball each for the bottom crust and lattice top. Work with hands to flatten each disk and roll out on floured surface to desired size and thickness.

Strawberry Rhubarb Pie

1 Double portion of crust

2 Jumbo Eggs from Julie’s Happy Hens

3/4 cup sugar

2 Tablespoons Aurora Mills Flour

1 1/2 Cups rhubarb cut into 1/2 inch pieces

2 Cups fresh strawberries, stemmed and halved

1 Teaspoon fresh lemon zest

1 Teaspoon fresh squeezed lemon juice

1/4 Stick Casco Bay Unsalted Butter

1+ Tablespoon equal parts cinnamon and sugar (to top lattice)

Preheat oven to 450*

Beat eggs lightly mixing in the flour, sugar, lemon zest and juice. Combine with rhubarb and strawberries in a large bowl. Toss until rhubarb and strawberries are coated. Pour into an unbaked pie crust reserving some of the liquid. Dot the top of the filling with slices of butter. Cover with a lattice top. Brush with the remaining egg mixture and sprinkle top generously with cinnamon sugar mix.

Place in the oven, reduce heat to 350*, and bake for 40 minutes (I enjoy the tips of the crusts slightly burned and tend to cook longer).
