About Us
All natural, all grass-fed bison raised on our 30 acre pasture in Berwick, Maine. We occasionally harvest bison from other like-minded farms in New Hampshire and the surrounding area.

Practices
We practice rotational grazing to limit soil impact and reduce parasite exposure. Our animals feed on grass and local hay year round, with access to forage for supplemental minerals. Our farm is free of antibiotics, hormones or chemicals.

About Us
Governor Dale Farm is an historic farm located in North Hampton, NH. The market garden features two acres of bio-intensive field production and three high tunnels for season-extending production. The property was originally owned and built by New Hampshire’s Governor (1945-1949), Charles M. Dale.

Practices
Governor Dale Farm grows fresh produce, herbs, and flowers using regenerative agriculture practices with a focus on soil health. Below are some of the highlights of our growing systems:

*Year-round cover crop rotation to improve soil fertility, attract local pollinators, and to increase biodiversity on the farm.
*Seed we use is GMO free and sourced locally with a preference to heirloom and organic varieties.
*Only organic potting soil, fertilizer, and soil amendments are used.
*Only organic, biologically-based sprays are used (sparingly) for pest-disease control.
*Absolutely NO chemical fertilizers, pesticides, or herbicides are used.
*Absolutely NO plastic is used in field production, instead local straw or seaweed for mulch.

About Us
We are on a mission to explore the full range of exquisite flavors that can be found in chocolate. Enna Chocolate is made from bean to bar in our micro factory using fine cacao produced in different countries around the world. Each origin can result in very different flavor profiles. We hope you will visit our factory for a tour, join us on our chocolate adventure, and enjoy the taste experience that we create for you.

Fine chocolate flavor occurs at the intersection of art and science, and these two realms are equally fascinating! The chocolate-maker must use her palate and knowledge to finesse the best flavors out of her beans: balancing acidity, astringency, bitterness, earthiness, and other elements.

Every cacao seed, with its particular combination of genetics, terroir, and fermentation, along with our processing, carries potential for incredible flavor. Enna Chocolate is made with cacao, pure organic cane sugar, plus just a smidge of cocoa butter, but you may swear you taste more: lemon, cinnamon, rum, green grass, raspberry, apple, tobacco, mandarin, lapsang, fig, mushroom, jasmine, wintergreen, licorice, cedar… these are just a few of the flavor notes that may be revealed in fine single-origin chocolate.

About Us
We grow up to 12 different species of mushrooms, all from certified organic “blocks”, that are produced by 3 other mushroom farms.
Although not certified organ ourselves, we only use filtered air, and filtered artesian well water in our grow rooms.
At the same location as our farm, we have both a licensed commercial kitchen, and a retail shop. All of our products are produced in our kitchen from scratch, sourcing ingredients locally whenever possible. Our retail shop also carries many other local products.

Practices
Currently 100 % of my staff has prior experience in the food industry, and more than 50% including myself, are certified “Food Safety Managers”.
We extend our kitchen practices into our mushroom harvesting area, and are constantly sanitizing and cleaning all surfaces throughout the day.
Mushrooms have a short shelf life, so in order to minimize food waste, we utilize everything that doesn’t sell before what we consider to be it’s prime window, or any damaged or broken mushrooms, by turning them into delicious jerky, powders, or other products in our kitchen.
