** We Our Staff!

This week meet Kate Donald, one of the owners of Three River Farmers Alliance, and farmer-owner of Stout Oak Farm! Kate has been farming for 20 years, and was first was drawn to farming as a career while working on urban agriculture projects in New York City after college. She trained at the Farm and Garden apprenticeship program at the University of California at Santa Cruz and then worked on farms in California and Massachusetts before returning to New Hampshire, where she grew up. In 2012, Kate and her husband Jeff purchased land in Brentwood, where Stout Oak Farm put down more permanent roots.

Kate chose farming as her profession because she sees growing food as a way to contribute something positive and nurturing to the community in a really direct way. She loves the physical work of farming, and feels lucky to spend most of her waking hours outdoors.

Her favorite vegetable to grow and eat is kale! She loves improvisational cooking with whatever is in abundance, and views any meal that includes 8 or more different vegetables as a personal triumph!

Our Packline Coordinator, Steph, impressed us all at our staff potluck with this beautiful blue potato salad. If you’ve still got adirondack blue potatoes at home, this is the perfect way to cook them up for a summer dish.

Blue Potato Salad
Ingredients
Adirondack Blue Potatoes from Juniper Hill Farm
Mayo
Sour cream
Dijon mustard (or try any mustards from Belknap Foodshed)
Dill (fresh from Kitchen Garden Farm when available)
Eggs from Julie’s Happy Hens
Salt & pepper using Maine Sea Salt
Nasturtium flowers

Instructions
Wash the potatoes and boil them whole. If you chop them first, I have found that I lose some of the blue color. Once you can easily pierce them with a fork, let them cool. While waiting, combine the mayo, sour cream, dijon mustard, dill, salt, and pepper to your taste. Add to the the potatoes and mix well. Add hard boiled eggs, sliced, to the surface of the dish. Garnish with nasturtium flowers. Prepare to impress!

We ♥ Our Staff’s Recipes!
First things first – don’t miss out on fresh fennel from Hungry Heart Farm this week! Once you’ve added some to your order, read below and shop the rest of the ingredients to make this awesome recipe shared by our Admin Assistant, Perri Krywick:

Fennel Frond Pesto
Ingredients
1 cup sunflower seeds (or pine nuts, walnuts, almonds etc.)
3 cups loosely packed fennel fronds (Hungry Heart Farm)
1 lemon juiced
1 clove garlic (Kitchen Garden Farm)
1 tsp sea salt (Maine Sea Salt)
1/3 cup grated Reverie cheese (Parish Hill Creamery)
½ cup olive oil

Instructions
Add the seeds or nuts, 1/4 cup of olive oil, lemon juice, garlic and salt to a food processor and blend. Add in fennel fronds and Reverie cheese and blend until smooth. Slowly add more olive oil until you have reached your desired consistency. You can also add a little water if you prefer a thinner sauce.

Store in an airtight container in the fridge or freeze for later use.

Serve on Blonde Spaghetti from Valicenti Pasta Farm and top with sundried tomatoes, or sliced fresh tomatoes from Heron Pond Farm.

Brandmoore FarmBrandmoore Farm is a diverse farm in Rollinsford, NH, run by Philip and Rebecca Brand. Located along the Salmon Falls River, which marks part of the border between NH and Maine, they manage 400 acres of rolling pasture, meadows, hay fields, and woodlands. They raise cows, pigs, chickens, and grow 2 acres of vegetables. The farm included a dairy operation until 2020, when they transitioned out of dairy—at least for now—to focus on the other farm ventures. Try their bacon this week in your Veggie-GO order!

** Grateful Gardens at Rocky Acres Farm Stand

Rocky Acres Farm Stand in York, Maine first opened in the 1970s to serve the local and summertime residents of York Beach. Since then, the farm stand has been maintained by family members, and has recently been taken over by a couple local gal’s… Halley Smith and Brandta Ruger, of York Maine, leasing the stand from the original farm owners. They are putting a new spin on Rocky Acres offering prepared items from Black Birch in Kittery, grab-and-go beach snacks and BBQ sides. They also offer coffee and baked goods (in partnership with Sunday Supper Society in Eliot, Lil’s and lovebirds in Kittery). Their long-term vision is to create a hub of locally made products and grab-and-go beach food, working with as many local farms as possible. Evan Eppler shares his favorite Strawberry Rhubarb Pie recipe!

My father ran a bakery out of my childhood home. This recipe was a summer time favorite in our small village. It always tastes better with local ingredients like the ones featured here! Though likely derived from a number of New England recipe books, this one is credited to Kryndlemans Fine Baked Goods of Strafford, Vermont.

Crust

3 Cups Aurora Mills Flour

1/2 Tablespoon salt

1 Cup Crisco or other shortener

9+ Tablespoons cold water

Sift flour and salt into a large bowl. Cut in Crisco just to the point where no large chunks of shortening remain (Encourages a flaky crust). Sprinkle cold water over dough one tablespoon at a time tossing pastry with a fork to mix. Use only enough water so that pastry binds together in a clump but is not sticky wet when handled. Form round into a ball each for the bottom crust and lattice top. Work with hands to flatten each disk and roll out on floured surface to desired size and thickness.

Strawberry Rhubarb Pie

1 Double portion of crust

2 Jumbo Eggs from Julie’s Happy Hens

3/4 cup sugar

2 Tablespoons Aurora Mills Flour

1 1/2 Cups rhubarb cut into 1/2 inch pieces

2 Cups fresh strawberries, stemmed and halved

1 Teaspoon fresh lemon zest

1 Teaspoon fresh squeezed lemon juice

1/4 Stick Casco Bay Unsalted Butter

1+ Tablespoon equal parts cinnamon and sugar (to top lattice)

Preheat oven to 450*

Beat eggs lightly mixing in the flour, sugar, lemon zest and juice. Combine with rhubarb and strawberries in a large bowl. Toss until rhubarb and strawberries are coated. Pour into an unbaked pie crust reserving some of the liquid. Dot the top of the filling with slices of butter. Cover with a lattice top. Brush with the remaining egg mixture and sprinkle top generously with cinnamon sugar mix.

Place in the oven, reduce heat to 350*, and bake for 40 minutes (I enjoy the tips of the crusts slightly burned and tend to cook longer).
