** Codman Community Farms

The original Codman family farm, sometimes referred to as “The Grange,” was established in the early 19th century on the former estate of Chambers Russell, one of Lincoln, MA’s founders. The farm had been in continuous operation for over 150 years, with respectable dairy, vegetable and fruit operations. It was one of only a handful of working farms in Lincoln remaining after the Second World War. When Dorothy Codman died in 1967, her will provided for the transfer of the barns and acreage to the Ogden Codman Trust. In 1970, the town of Lincoln purchased the property, and in 1973 voted at town meeting to create a nonprofit Codman Community Farms, Inc., to run its operation (https://codmancommunityfarms.org/) .

Founded in 1973 by citizens interested in continuing the farming tradition of Lincoln, CCF is a non-profit agricultural enterprise. It began as a part-time, volunteer operation and over the years has grown, thanks to the myriad of volunteers that helped along the way.

Whipoorwill Dairy Farm in Kensington, NH (http://whippoorwillfarmnh.com/) started in 2018. Megan and Thatcher bought their cows from the Bodwell Farm and both attended UNH for Dairy Management and Sustainable Agriculture. They milk 60 Holstein cows, cross some of their cows with beef for their beef herd, breed pigs and raise for meat, chickens for meat and eggs, turkeys and ducks for eggs. They have a small flock of goats and sheep for weed control and cute spring babies! Their cows graze from April till November and then are fed a balanced diet by their nutritionists. This month, Whippoorwill started their own ice cream business – buying in ice cream mix from Contoocook Creamery, and creating their own recipes! Three River Farmers Alliance has created a simple, efficient program for providing weekly donations from our generous contributors used to purchase excess crops at cost from local farms. We then distribute produce to local food pantries within our community. We use additional donations to supplement credits for SNAP eligible Veggie-Go customers ensuring all donations directly assist in the fight against hunger.

As we near the colder months, nutrition becomes even more important. In order to expand upon our existing services, we ask if you are able, to add a financial donation to your Veggie-GO order this week. We are so grateful for your generosity and community support!

Poached Pears
“Pears have always been close to my heart. My Italian ancestors had a thriving pear farm in Calabria and my grandmother used to place bottles of brandy over a few pears as they grew on the tree in order to preserve the fruit. Poached pears, sometimes in this brandy, were a quick and easy dessert in my house growing up but, they can stand up to the elegance of any dinner party! I hope this becomes one of your new favorites too.”

Ingredients
2 pears, peeled and cored from the bottom (Applecrest Farm)
1c water (add extra 1/2 c if not using alcohol)
6 T sugar
1/2 c brandy, St. Germain or a crisp white wine (Optional)
1/2 tsp cardamom
Half of 1 lemon, lime or a small orange

Directions

Combine all ingredients except for pears in a thick-bottomed pot. Let it come to a boil and stir until sugar is dissolved, about 1 minute.

Turn the pot down to medium heat, add pears, cover with a lid and simmer. Spoon some of the poaching liquid onto the pears a few times while cooking. The pears should be done in 10-15 minutes or once they are very soft and easily pricked with a fork.

Remove pears with a slotted spoon and serve with the sauce spooned over top.

Serve with vanilla ice cream!

Golden Beet & Arugula Salad

Salad Ingredients
2 medium golden beets, sliced thin (Harlow Farm)
1 Tbs olive oil
1 tsp thyme or rosemary
1/2 lb bag of arugula (Heron Pond Farm)

1/2 cup of pea shoots (Stout Oak Farm)
Reverie or fresh chevre cheese (Parish Hill Creamery or Blue Ledge Farm)

Lemon Dressing
2 Tbs olive oil
Juice of 1 lemon
Salt (Maine Sea Salt)
Fresh ground pepper

Directions

Peel and slice the beets thinly either using a mandolin or carefully with a sharp
knife. Add olive oil to a pan set to medium heat, toss in beets, herbs, and a pinch
of salt. Cover the pan with a lid and let it cook until beets are tender.

In a large bowl, add arugula, pea shoots, and toss with the lemon dressing. Top with
beets and the optional cheese.

They are recognized as being the first child care center to earn Licensed Plus status. Licensed Plus is a quality rating system that recognizes NH child care programs for efforts to improve their quality of care for young children and rewards programs that strive to continuously improve their practices and staff qualifications. Mushroom and Greens Ramen
Ramen is one of my favorite rainy day dishes and since mushrooms grow best in wet weather, it seems like the perfect pairing to add some earthiness to this dish. I also love adding grated daikon radish to many noodle dishes, including this one. It’s referred to as “Oroshi” in Japanese and is sometimes served on cold noodles but I think it adds a nice depth of flavor to this ramen. -Perri Krywick, TRFA Admin Assistant

Ingredients

1 tablespoon sunflower oil (Yost Farms)
3 cloves garlic, minced (Brandmoore & Willoughby Farms)
2 leeks, washed well and sliced thin
1 tablespoon freshly grated ginger
6 cups mushroom or chicken stock or water (Vernon Family Farm)
4 teaspoons soy sauce
1/4 cup grated daikon radish (Harlow Farm) (Use a very fine grater or blender. It should be a paste)
1/2 pound fresh assorted mushrooms, sliced (Dunk’s Mushrooms)
1 package of Valicenti Ramen Noodles (GF and Vegan) (Valicenti Pasta Farm)
1 bunch of assorted braising greens, stems removed and diced, leaves shredded (Wild Fern Farm)
1 tablespoon rice wine vinegar
Freshly ground black pepper, to taste

Optional Toppings:
Bacon, fried, and cubed (Kellie Brook Farm)
Soft Boiled Egg, sliced in half (Julie’s Happy Hens)
Scallions, thinly sliced

Directions

In a heavy-bottomed pot, add sunflower oil, garlic, leeks, and ginger. Cook until it is softened for about 5 minutes. Next, add soy sauce, daikon, greens stems, and mushrooms, and cook another 8 minutes. Add stock or water and let it come to a boil. Once the pot is boiling, add the ramen and cook per package instructions until the ramen is tender. Turn off the heat, add greens so they wilt but don’t overcook, and season with black pepper and rice wine vinegar. Serve immediately and enjoy!

Big news! Short Creek Farm is opening their own USDA-inspected processing facility where they can do everything needed to turn pork and beef into the delicious sausages and charcuterie you know and love.

“This is a huge project, requiring expensive renovations and a lot of specialized equipment (also expensive), and we are seeking funding from several different sources,” says Jeff Backer, co-owner of Short Creek. “As part of our fundraising efforts, we are asking for help from the community and giving folks an opportunity to invest in our success.”

“Investment from the community is absolutely vital to the success of this project, but we are not asking for a donation,” says Backer. “We are working with Mainvest, an online platform that allows anyone to invest in our business and receive a return on their investment as Short Creek grows.”

With fall coming and kids headed back to school, our local schools are preparing to serve hundreds of free meals per week to students in need. We are humbly asking for your donations to enable us to deliver local food to additional school districts in the Seacoast region. Eggplant Caponata
The recipe is based on the Eggplant Caponata in Root to Leaf by Stephen Satterfield with my slight modifications. This remains one of my favorite unique ways to eat eggplant. If you can bear it, let the caponata rest overnight and serve the next day when the flavors have melded together even more. -Perri Krywick, TRFA Admin Assistant

Ingredients

3c eggplant, diced
1 tsp salt, divided
4Tbs olive oil, divided
1 small onion, diced
2 garlic cloves, sliced thin
1 tsp thyme
1/4 tsp pepper flakes
2 tomatoes, diced (juices and seeds included)
2 Tbs raisins
1 Tbs sherry vinegar or red wine vinegar
1 tsp honey
Salt and pepper
Fresh parsley, basil or mint for garnish

Directions

Heat oven to 350°F. Toss eggplant with 1/2 tsp salt and 2 Tbs olive oil. Spread the eggplant in a shallow pan and roast until slightly caramelized, but still intact with a creamy texture-about 30 minutes.

Heat the remaining 2 Tbs olive oil in a skillet over medium low heat. Sauté the onion, garlic, thyme and pepper flakes with the remaining 1/2 tsp salt until tender-about 5 minutes. Add the tomatoes and stir the mixture frequently for 5 minutes. Add the raisins, vinegar, honey, pepper and stir to combine. Let the mixture simmer for 5 more minutes. Pour the sauce over the eggplant, stir to combine and taste for any additional seasoning. You can serve it as is or let it cool and serve at room temperature or chilled. Top with fresh parsley, basil or mint.

Grilled Corn and Peach Salad
Created by Perri Krywick, our Administrative Assistant

Salad Ingredients
* 4 ears of corn, shucked (Brookdale Fruit Farm)
* 2-3 peaches, pitted (Applecrest & Brookdale Farms(
* 1 large onion, peeled (Old Friends Farm)
* 3 tbsp olive oil
* 1/4 cup parsley, chopped (Wild Fern Farm)
* Salt and pepper
* 5oz bag of salanova lettuce (Heron Pond Farm)

Honey Vinaigrette Ingredients
* 1 Tbsp honey (Meadowview Farm)
* 2 Tbsp white wine vinegar or apple cider vinegar
* 1/8 cup extra virgin olive oil
* Salt and pepper

Directions

1. Heat a grill to medium/high heat and brush the ears of corn, peach wedges, and onion slices with 3 Tbsp olive oil. Grill until browned/charred to your liking (Don’t hesitate to char the peaches. They’re delicious!)

2. Cut the kernels off the grilled corn and coarsely chop the peaches, onion, and parsley.

3. Toss the corn kernels, peaches, onion, and parsley with the honey vinaigrette and season to taste with salt and pepper.

4. Arrange the lettuce in a bowl. Spoon the corn salad on top and serve. Best served fresh but corn salad can be kept in the refrigerator for later use.

Honey Vinaigrette
1. Whisk the honey, vinegar and oil together. Season with salt and pepper.

Today we share another stunner recipe from our Administrative Assistant, Perri Krywick. Order plenty of beets and cream cheese, and let us know how your Beet Red Velvet Cake with Cream Cheese Frosting turns out!

Beet Red Velvet Cake
with Cream Cheese Frosting

Cake Ingredients:
1 cup beet purée, from fresh red beets (Gov. Dale or Two Farmers Farms) (not cooked)
3/4 cup milk (Contoocook Creamery)
1 tablespoon white wine vinegar
2 tablespoons lemon juice
1 tablespoon vanilla extract
2 1/2 cups cake flour
3 tablespoons cocoa powder
2 teaspoons baking powder
1 teaspoon cream of tartar
1 teaspoon salt (Maine Sea Salt)
1/2 cup sunflower oil (Yost Farms) or olive oil
1/2 cup unsalted butter, softened (Casco Bay Creamery)
2 cups granulated sugar
3 large eggs (Julie’s Happy Hens)

Frosting Ingredients:
8 ounces cream cheese, at room temperature (Champlain Valley Creamery)
8 ounces unsalted butter
2 tablespoons sour cream or greek yogurt
1 pound confectioners’ sugar
1/2 teaspoon lemon zest
1 teaspoon vanilla extract
1 pinch salt

Directions:
Preheat oven to 350° F and position a rack in the center of the oven. Butter two 8-inch cake pans then dust the pans with flour.

Add the beet purée, milk, vinegar, lemon juice, and vanilla extract to a food processor fitted with the steel blade and process until very smooth.

Sift the cake flour, cocoa powder, baking powder, cream of tartar, and salt together in a bowl.
In a large bowl, beat the sugar, oil, and butter together until creamy. Add the eggs one at a time, mixing for 30 seconds after each addition.

Alternating, add the flour mixture and beet mixture, beginning and ending with the flour mixture. Divide between the prepared pans and bake until a toothpick inserted into the center of the cake comes out clean, about 20 to 30 minutes.

Cool the cakes on a rack for 20 minutes, then invert onto the rack to cool completely.

For the cream cheese frosting:
Beat the butter and cream cheese together on high speed until fluffy and smooth them beat in the sour cream.

Turn the mixer to low and gradually add the confectioners’ sugar until just combined, then turn the mixer up to medium-high and beat until fluffy and smooth, making sure to stop the mixer and scrape down to the bottom of the bowl so everything is evenly mixed. Add the lemon zest, vanilla extract, and salt.

To assemble the cake:
Trim the tops of the cake layers so they are flat, if necessary. Place one layer on a serving plate or pedestal and spread about 1 cup of frosting on top.

Top with the second cake layer, then smooth a thin coat of frosting on the outside of the cake. Chill for at least 30 minutes, then cover the cake with a second, heavier coat of frosting to finish.
