Nina Parrott, of The Fifth Flavor Catering, has assembled a crew of volunteers to help prepare a holiday dinner for
300+ members of Gather NH. On the menu: buttermilk-brined turkey with cranberry sauce, apple cider- glazed ham,
butternut squash soup with coconut + curry (with squash donated by 3River from Brandmoore Farm and onions
from Governor Dale Farm), cumin-roasted carrots (also from Gov Dale Farm), sweet and sour Brussels sprouts,
acorn squash (donated by 3 River from Amish Acres in Maine) with orange + dates, herb roasted potatoes with
garlic + paprika, and mashed sweet potatoes with maple brown butter + sour cream. About 100 local bakers have
signed up to supply the sweet treats: cookies, holiday breads and more.

Nina and crew have been cooking for Gather for a few years now. It started out as a way to use and repurpose
leftovers from large events, since a caterer can’t run “specials” on Monday. Now she does it whenever she can,
hoping to support the tremendously hard-working Cooking 4 Community team at Gather.

Parsnip Soup

“Parsnips and carrots are similar but I chose parsnips for this recipe for a few reasons. Their more fibrous texture
adds a little more bite and their spiced sweetness pairs very well with other spices like cumin, paprika, turmeric,
ginger, and cinnamon. It’s a simple and hearty soup that only needs a side of good bread to complement it perfectly.”

Ingredients:
2 tablespoons extra-virgin olive oil
6 cups parsnips, peeled and chopped

1 cup sunchokes, peeled and chopped ( alternatively, use all parsnips)
4 garlic cloves, chopped
2 teaspoons ground cumin
1 tsp smoked paprika
4 fresh sage leaves
1 teaspoon salt
3 cups water
2 cups veggie broth,
1 cup milk, or alternative milk of your choice

Directions:
In a medium soup pot, heat the olive oil. Add the parsnips, sunchokes (optional), and garlic and cook over moderate
heat, stirring, until lightly golden, 5 minutes. Stir in the cumin, paprika, and salt. Cook for a couple of minutes until
fragrant. Add the water, broth, and milk. Bring to a simmer and cook until the vegetables are soft, about 25 minutes.

Working in batches, puree the soup in a blender until smooth. I recommend keeping a little bit of texture in the soup
by only partially blending a few batches. Pour the soup back into the pot. Add more liquid if the consistency season
to taste with additional salt and pepper.

Serve with A&J King’s Poached Garlic Sourdough bread or a Baguette

Candied Cranberries

This recipe has been adapted from Cake Whiz. They’re a perfect dessert topping from chocolate cake to ice cream. They’re also delicious just on their own. Happy sweet snacking!

Ingredients:
2 cups sugar, divided
1/2 cup water
1 (12 ounce) bag fresh cranberries, washed

Directions:
Combine 1/2 cup sugar and 1/2 cup water in a small pot over medium heat, stirring, until sugar is dissolved. Be careful not to boil. Turn the heat off and let the syrup cool for about 15 minutes.

Add the cranberries to the pot and stir to coat all cranberries. Use a slotted spoon to transfer cranberries to a wire rack with paper towels underneath. Store any left over syrup in the fridge to sweeten other things with.

Cranberries should be left to dry for 1 hour. After one hour, roll the cranberries in remaining sugar until they’re coated. Enjoy by the handful!

Store in an airtight container in the fridge for up to 4 days. If the cranberries begin to show little water drops, roll them in sugar once again.

Need a break from the holiday feasts? Try these Veggie Sandwiches for Two.

Ingredients:
2 medium-sized peppers or 4 small
¼ cup plus 1 Tbs olive oil
3 leeks, white and light green parts only, halved lengthwise, rinsed well
1 tsp fresh rosemary or ½ tsp dried rosemary
About 1 lb spinach, washed well
4 slices of Grand Levain bread
1 garlic clove
Fresh Feta or Chevre cheese (optional)
Salt and pepper

Roasted Peppers:
On a grill or gas stovetop- place the whole peppers directly over the flame, turn them with tongs until all sides are charred. Or, in an oven- cut the peppers in half lengthwise and press down to flatten. Place them on a sheet pan, drizzle the peppers with 1 Tbs oil, and roast at 400F until the skin blisters.

After the peppers are charred and blistered, place them in a covered bowl for at least ten minutes to let the steam cook them further. The skins should peel away easily after steaming. Discard the skins and seeds.

Caramelized leeks:
Slice leeks crosswise into 3″ pieces, then lengthwise into thin matchsticks. Heat ¼ cup of oil in a large skillet over medium. Add leeks; season with a pinch of salt. Cover the pan but stir occasionally (reduce heat if needed to avoid browning or burning the leeks), until the leeks are soft, 8–10 minutes. Add rosemary and continue to cook, stirring often, until leeks are golden brown and caramelized, 5–10 more minutes. Turn off the heat and set the pan aside.

Spinach:
In another pan, wilt the freshly washed (and not dried) spinach for a few minutes and season lightly with salt and pepper. Do not overcook.

Assemble:
Toast the bread and rub with sliced garlic. Cover with caramelized leeks, spinach, cheese (optional), and a large piece of roasted pepper. Season with salt and pepper if needed. Enjoy!

Try a unique desert this holiday season – Vegan Buttercup Pudding.

“In this pumpkin-centric time of year, I’d like to show some love to other desert-worthy squash! Doesn’t Buttercup just sound adorable? I hope you enjoy this creamy, fluffy, and easy sweet treat. “

Ingredients:
1 buttercup squash, about 5 cups peeled, seeded, and cubed
½ cup coconut cream
¼ cup maple syrup
1 tablespoon coconut oil
1 teaspoon vanilla
1 teaspoon cinnamon
¼ teaspoon nutmeg
⅛ teaspoon sea salt
2 to 5 tablespoons non-dairy milk (optional)

Directions:
Preheat oven to 400F. Place buttercup squash in a baking dish and bake for about 30 minutes until tender.

Combine all ingredients, except for the almond milk in a blender or food processor and puree until very smooth. Add almond or other non-dairy milk if necessary to create a smooth blended consistency. It should not be runny. Taste and adjust sweetness or spices to your liking.

Transfer to a bowl and refrigerate for at least 3 hours. Serve chilled and enjoy it as is or top with your choice of spices, nuts, coconut cream, whipped cream, or chocolate chips.

Potato Mushroom Soup

“In anticipation of the long soup season ahead, I thought I’d share with you a simple but delicious take on classic potato soup. I love keeping a bit of texture in this soup by not pureeing the whole thing and by adding some extra freshness with wilted kale at the end. Feel free to also puree it all and add more kale or spinach for a cozy green soup.”

Ingredients:
8oz of mushrooms, roughly chopped (Dunk’s Mushrooms)
2 tablespoons butter (Casco Bay Creamery)
1/2 teaspoon fine sea salt, more to taste (Maine Sea Salt)
1 onion (Brandmoore Farm)
2 cloves garlic (Willoughby Farm)
1/8 cup dry sherry or white wine (optional)
1 pound potatoes (Heron Pond Farm)
5 cups mushroom or vegetable broth (Dunk’s Mushrooms)
1 cup kale, destemmed and chopped (Two Farmers Farm)
Black pepper, to taste

Directions:
In a large pot, set to medium-high heat, melt the butter, add the mushrooms and salt. Cook, stirring frequently until the mushrooms start to brown, about 5 minutes.

Add the onion to the mushrooms and cook, stirring frequently, until the onions are soft, about 3 minutes. Add the garlic and cook for about 1 minute. Add the sherry, potatoes, and broth and bring to a boil. Reduce the heat to maintain a steady simmer and cook until all the potatoes are tender about 10 minutes.

Use a hand-held blender to purée the soup or, carefully puree in a blender or food processor. If you would like a more textured soup, reserve ⅓ to ½ of the veggies to add back in once the rest of the soup is pureed.

Finally, add the kale greens so they wilt just before serving.

Add salt and freshly ground black pepper to taste. Garnish with fresh parsley or diced crispy bacon!
