Big news! Short Creek Farm is opening their own USDA-inspected processing facility where they can do everything needed to turn pork and beef into the delicious sausages and charcuterie you know and love.

“This is a huge project, requiring expensive renovations and a lot of specialized equipment (also expensive), and we are seeking funding from several different sources,” says Jeff Backer, co-owner of Short Creek. “As part of our fundraising efforts, we are asking for help from the community and giving folks an opportunity to invest in our success.”

“Investment from the community is absolutely vital to the success of this project, but we are not asking for a donation,” says Backer. “We are working with Mainvest, an online platform that allows anyone to invest in our business and receive a return on their investment as Short Creek grows.”

Over the past year and a half, we have been able to donate approximately $1,000 worth of local foods each week to community members facing food insecurity, and community resource centers working to serve that need. With fall coming and kids headed back to school, our local schools are preparing to serve hundreds of free meals per week to students in need. We are humbly asking for your donations to enable us to deliver local food to additional school districts in the Seacoast region. Eggplant Caponata
The recipe is based on the Eggplant Caponata in Root to Leaf by Stephen Satterfield with my slight modifications. This remains one of my favorite unique ways to eat eggplant. If you can bear it, let the caponata rest overnight and serve the next day when the flavors have melded together even more. -Perri Krywick, TRFA Admin Assistant

Ingredients

3c eggplant, diced
1 tsp salt, divided
4Tbs olive oil, divided
1 small onion, diced
2 garlic cloves, sliced thin
1 tsp thyme
1/4 tsp pepper flakes
2 tomatoes, diced (juices and seeds included)
2 Tbs raisins
1 Tbs sherry vinegar or red wine vinegar
1 tsp honey
Salt and pepper
Fresh parsley, basil or mint for garnish

Directions

Heat oven to 350°F. Toss eggplant with 1/2 tsp salt and 2 Tbs olive oil. Spread the eggplant in a shallow pan and roast until slightly caramelized, but still intact with a creamy texture-about 30 minutes.

Heat the remaining 2 Tbs olive oil in a skillet over medium low heat. Sauté the onion, garlic, thyme and pepper flakes with the remaining 1/2 tsp salt until tender-about 5 minutes. Add the tomatoes and stir the mixture frequently for 5 minutes. Add the raisins, vinegar, honey, pepper and stir to combine. Let the mixture simmer for 5 more minutes. Pour the sauce over the eggplant, stir to combine and taste for any additional seasoning. You can serve it as is or let it cool and serve at room temperature or chilled. Top with fresh parsley, basil or mint.

This new fridge is located at the Kittery Community Center and the basic concept is simple. A refrigerator is set up in areas of need; community members can take what they need and even leave something they don’t need behind. Volunteers help stock, clean and maintain these community fridge locations popping up nation-wide, and neighbors stock the fridge with what they can source. The goal is threefold: reduce food waste, feed the hungry, and reduce food insecurity.

Blueberry Mostarda

Ingredients
* ½ cup apple cider vinegar or red wine vinegar
* ¼ cup sugar
* 1 small red onion (Old Friends Farm)
* 1/2 tsp mustard
* ½ tsp fresh ginger
* 1 sprig of thyme
* salt (Maine Sea Salt)
* 1 pint of blueberries (Applecrest Farm Orchards)

Directions

Combine the vinegar, sugar, onion, ginger, and mustard in a pot set to medium-high heat. Let this simmer until the mixture reduces by half. Add the blueberries and cook until the berries start to blister and the sauce starts to thicken. Serve hot or chilled. This pairs well with poultry, lamb, and sharp cheeses.

Can be stored in the refrigerator for up to two weeks.

Grilled Corn and Peach Salad

Salad Ingredients
* 4 ears of corn, shucked (Brookdale Fruit Farm)
* 2-3 peaches, pitted (Applecrest & Brookdale Farms(
* 1 large onion, peeled (Old Friends Farm)
* 3 tbsp olive oil
* 1/4 cup parsley, chopped (Wild Fern Farm)
* Salt and pepper
* 5oz bag of salanova lettuce (Heron Pond Farm)

Honey Vinaigrette Ingredients
* 1 Tbsp honey (Meadowview Farm)
* 2 Tbsp white wine vinegar or apple cider vinegar
* 1/8 cup extra virgin olive oil
* Salt and pepper

Directions

1. Heat a grill to medium/high heat and brush the ears of corn, peach wedges, and onion slices with 3 Tbsp olive oil. Grill until browned/charred to your liking (Don’t hesitate to char the peaches. They’re delicious!)

2. Cut the kernels off the grilled corn and coarsely chop the peaches, onion, and parsley.

3. Toss the corn kernels, peaches, onion, and parsley with the honey vinaigrette and season to taste with salt and pepper.

4. Arrange the lettuce in a bowl. Spoon the corn salad on top and serve. Best served fresh but corn salad can be kept in the refrigerator for later use.

Honey Vinaigrette
1. Whisk the honey, vinegar and oil together. Season with salt and pepper.

Today we share another stunner recipe from our Administrative Assistant, Perri Krywick. Order plenty of beets and cream cheese, and let us know how your Beet Red Velvet Cake with Cream Cheese Frosting turns out!

Beet Red Velvet Cake
with Cream Cheese Frosting

Cake Ingredients:
1 cup beet purée, from fresh red beets (Gov. Dale or Two Farmers Farms) (not cooked)
3/4 cup milk (Contoocook Creamery)
1 tablespoon white wine vinegar
2 tablespoons lemon juice
1 tablespoon vanilla extract
2 1/2 cups cake flour
3 tablespoons cocoa powder
2 teaspoons baking powder
1 teaspoon cream of tartar
1 teaspoon salt (Maine Sea Salt)
1/2 cup sunflower oil (Yost Farms) or olive oil
1/2 cup unsalted butter, softened (Casco Bay Creamery)
2 cups granulated sugar
3 large eggs (Julie’s Happy Hens)

Frosting Ingredients:
8 ounces cream cheese, at room temperature (Champlain Valley Creamery)
8 ounces unsalted butter
2 tablespoons sour cream or greek yogurt
1 pound confectioners’ sugar
1/2 teaspoon lemon zest
1 teaspoon vanilla extract
1 pinch salt

Directions:
Preheat oven to 350° F and position a rack in the center of the oven. Butter two 8-inch cake pans then dust the pans with flour.

Add the beet purée, milk, vinegar, lemon juice, and vanilla extract to a food processor fitted with the steel blade and process until very smooth.

Sift the cake flour, cocoa powder, baking powder, cream of tartar, and salt together in a bowl.
In a large bowl, beat the sugar, oil, and butter together until creamy. Add the eggs one at a time, mixing for 30 seconds after each addition.

Alternating, add the flour mixture and beet mixture, beginning and ending with the flour mixture. Divide between the prepared pans and bake until a toothpick inserted into the center of the cake comes out clean, about 20 to 30 minutes.

Cool the cakes on a rack for 20 minutes, then invert onto the rack to cool completely.

For the cream cheese frosting:
Beat the butter and cream cheese together on high speed until fluffy and smooth them beat in the sour cream.

Turn the mixer to low and gradually add the confectioners’ sugar until just combined, then turn the mixer up to medium-high and beat until fluffy and smooth, making sure to stop the mixer and scrape down to the bottom of the bowl so everything is evenly mixed. Add the lemon zest, vanilla extract, and salt.

To assemble the cake:
Trim the tops of the cake layers so they are flat, if necessary. Place one layer on a serving plate or pedestal and spread about 1 cup of frosting on top.

Top with the second cake layer, then smooth a thin coat of frosting on the outside of the cake. Chill for at least 30 minutes, then cover the cake with a second, heavier coat of frosting to finish.

This week meet Kate Donald, one of the owners of Three River Farmers Alliance, and farmer-owner of Stout Oak Farm! Kate has been farming for 20 years, and was first was drawn to farming as a career while working on urban agriculture projects in New York City after college. She trained at the Farm and Garden apprenticeship program at the University of California at Santa Cruz and then worked on farms in California and Massachusetts before returning to New Hampshire, where she grew up. In 2012, Kate and her husband Jeff purchased land in Brentwood, where Stout Oak Farm put down more permanent roots.

Kate chose farming as her profession because she sees growing food as a way to contribute something positive and nurturing to the community in a really direct way. She loves the physical work of farming, and feels lucky to spend most of her waking hours outdoors.

Her favorite vegetable to grow and eat is kale! She loves improvisational cooking with whatever is in abundance, and views any meal that includes 8 or more different vegetables as a personal triumph!
