Need a break from the holiday feasts? Try these Veggie Sandwiches for Two.
Ingredients:
2 medium-sized peppers or 4 small
¼ cup plus 1 Tbs olive oil
3 leeks, white and light green parts only, halved lengthwise, rinsed well
1 tsp fresh rosemary or ½ tsp dried rosemary
About 1 lb spinach, washed well
4 slices of Grand Levain bread
1 garlic clove
Fresh Feta or Chevre cheese (optional)
Salt and pepper
Roasted Peppers:
On a grill or gas stovetop- place the whole peppers directly over the flame, turn them with tongs until all sides are charred. Or, in an oven- cut the peppers in half lengthwise and press down to flatten. Place them on a sheet pan, drizzle the peppers with 1 Tbs oil, and roast at 400F until the skin blisters.
After the peppers are charred and blistered, place them in a covered bowl for at least ten minutes to let the steam cook them further. The skins should peel away easily after steaming. Discard the skins and seeds.
Caramelized leeks:
Slice leeks crosswise into 3″ pieces, then lengthwise into thin matchsticks. Heat ¼ cup of oil in a large skillet over medium. Add leeks; season with a pinch of salt. Cover the pan but stir occasionally (reduce heat if needed to avoid browning or burning the leeks), until the leeks are soft, 8–10 minutes. Add rosemary and continue to cook, stirring often, until leeks are golden brown and caramelized, 5–10 more minutes. Turn off the heat and set the pan aside.
Spinach:
In another pan, wilt the freshly washed (and not dried) spinach for a few minutes and season lightly with salt and pepper. Do not overcook.
Assemble:
Toast the bread and rub with sliced garlic. Cover with caramelized leeks, spinach, cheese (optional), and a large piece of roasted pepper. Season with salt and pepper if needed. Enjoy!
