Need a break from the holiday feasts? Try these Veggie Sandwiches for Two.

Ingredients:
2 medium-sized peppers or 4 small
¼ cup plus 1 Tbs olive oil
3 leeks, white and light green parts only, halved lengthwise, rinsed well
1 tsp fresh rosemary or ½ tsp dried rosemary
About 1 lb spinach, washed well
4 slices of Grand Levain bread
1 garlic clove
Fresh Feta or Chevre cheese (optional)
Salt and pepper

Roasted Peppers:
On a grill or gas stovetop- place the whole peppers directly over the flame, turn them with tongs until all sides are charred. Or, in an oven- cut the peppers in half lengthwise and press down to flatten. Place them on a sheet pan, drizzle the peppers with 1 Tbs oil, and roast at 400F until the skin blisters.

After the peppers are charred and blistered, place them in a covered bowl for at least ten minutes to let the steam cook them further. The skins should peel away easily after steaming. Discard the skins and seeds.

Caramelized leeks:
Slice leeks crosswise into 3″ pieces, then lengthwise into thin matchsticks. Heat ¼ cup of oil in a large skillet over medium. Add leeks; season with a pinch of salt. Cover the pan but stir occasionally (reduce heat if needed to avoid browning or burning the leeks), until the leeks are soft, 8–10 minutes. Add rosemary and continue to cook, stirring often, until leeks are golden brown and caramelized, 5–10 more minutes. Turn off the heat and set the pan aside.

Spinach:
In another pan, wilt the freshly washed (and not dried) spinach for a few minutes and season lightly with salt and pepper. Do not overcook.

Assemble:
Toast the bread and rub with sliced garlic. Cover with caramelized leeks, spinach, cheese (optional), and a large piece of roasted pepper. Season with salt and pepper if needed. Enjoy!

Potato Mushroom Soup

“In anticipation of the long soup season ahead, I thought I’d share with you a simple but delicious take on classic potato soup. I love keeping a bit of texture in this soup by not pureeing the whole thing and by adding some extra freshness with wilted kale at the end. Feel free to also puree it all and add more kale or spinach for a cozy green soup.”

Ingredients:
8oz of mushrooms, roughly chopped (Dunk’s Mushrooms)
2 tablespoons butter (Casco Bay Creamery)
1/2 teaspoon fine sea salt, more to taste (Maine Sea Salt)
1 onion (Brandmoore Farm)
2 cloves garlic (Willoughby Farm)
1/8 cup dry sherry or white wine (optional)
1 pound potatoes (Heron Pond Farm)
5 cups mushroom or vegetable broth (Dunk’s Mushrooms)
1 cup kale, destemmed and chopped (Two Farmers Farm)
Black pepper, to taste

Directions:
In a large pot, set to medium-high heat, melt the butter, add the mushrooms and salt. Cook, stirring frequently until the mushrooms start to brown, about 5 minutes.

Add the onion to the mushrooms and cook, stirring frequently, until the onions are soft, about 3 minutes. Add the garlic and cook for about 1 minute. Add the sherry, potatoes, and broth and bring to a boil. Reduce the heat to maintain a steady simmer and cook until all the potatoes are tender about 10 minutes.

Use a hand-held blender to purée the soup or, carefully puree in a blender or food processor. If you would like a more textured soup, reserve ⅓ to ½ of the veggies to add back in once the rest of the soup is pureed.

Finally, add the kale greens so they wilt just before serving.

Add salt and freshly ground black pepper to taste. Garnish with fresh parsley or diced crispy bacon!

October was National Farm to School month, and Somersworth celebrated with local foods! Three Rivers and our producer farms–Heron Pond Farms, Brookdale Farm, Stout Oak Farm, and Two Farmers Farm– helped make that happen.

On October 21 and 28, all students and staff at their four schools were treated to a very special, locally sourced lunch in the cafeterias. Somersworth was recently awarded a $96,000 USDA Farm to School grant that seeks to increase access to local foods in schools, fueling healthy bodies and a healthy local economy. Delicious roasted chicken, local greens, local potatoes, and a tasty dessert made with local apples by their friendly Fresh Picks Cafe chefs and servers was a hit. The Somersworth school community is excited for more locally-sourced meals and ingredients on the school menu, eager to eat more sustainably, reduce their carbon footprint, and thrilled to support the many hard-working farmers in our region.

Lacto Fermented Carrots
“These pickles utilize the simplicity of a 2% salt brine, no cooking, and no vinegar to create a veggie that is packed with probiotics! This recipe is based on weight to take into account the water weight of the veggie that you are fermenting. You can use this basic formula to pickle almost anything you would like. Some of my favorites are red onion, beets with ginger, green beans with curry, and, of course, pickling cucumbers. Note that dense root vegetables will take a bit longer to fully ferment than softer and smaller ones. Happy snacking!”

Ingredients:
Carrots, washed and sliced (Two Farmers Farm)
Pickling salt or Kosher salt, be sure there are no additives
Distilled water
A few cloves of Garlic (optional) (Willoughby Farm)
A sprig of Dill (optional)
1 pint jar, cleaned but no need to sanitize

Directions
Place a pint-sized jar on a kitchen scale and tare the scale to 0. Pack the jar full of carrots, add garlic, dill or a flavoring of your choice- be sure to leave a little room at the top of the jar for air. Pour the water over the carrots, leaving a ¼ inch gap for air at the top. Find what 2% of the weight of your ingredients is by weighing the carrots, water and herbs combined in the jar and multiply that by .02. That number will be how much salt, by weight, you need to add. Pour the water from the jar into a separate bowl and set aside. Set another small bowl on the sale for the salt and tare to 0. Measure out the salt by weight and pour it into the bowl with water. Stir until the salt is completely dissolved then pour the brine back into your jar with the carrots. Close the lid and leave it out on your counter at room temperature to ferment for about a week.

Over this time the salt will infuse into the carrots and you will start to see the brine bubbling as sugar is converted into lactobacillus bacteria. The gasses created from this fermentation need to be released occasionally so that the jar doesn’t burst. You can either use a jar lid with an airlock attached or you can simply open the jar slightly (known as burping) about once a day. Taste your veggies after a few days to see if they are pickled to your liking. Once they are as pickled as you would like, store the jars in the coldest spot in your fridge to slow down fermentation dramatically. Some discoloration is normal if a carrot sticks up out of the water and is exposed to air, but the rest of the jar should be safe to eat unless you smell something very off. It should smell like mild kraut.

We are seeking motivated individuals to play a key role in our local food delivery service. Our ideal candidate has keen navigational skills, the ability to work independently, a natural sense of hospitality, and a strong interest in strengthening the network of local food hubs.

Responsibilities:

Daily responsibilities include delivering a wide variety of products to homes and businesses following route and time schedules, packaged order expediting and confirmation, vehicle loading, unloading, preparation, inspection, and operation, and daily reporting of vehicle and route details. Delivery drivers must follow appropriate Covid-19 contact-less delivery protocol to ensure both their own and customers safety.

Requirements:

-Possession of a valid driver’s license with a clean driving record, a reliable source of personal transportation and ability to obtain a DOT health card

-Compliance with all DOT regulations and safety standards

-Ability to drive a variety of refrigerated delivery vehicles including but not limited to vans and 16 foot box trucks

-Must be able to bend, squat, kneel, push, pull and walk on uneven surfaces, climb stairs both inside and outside, lift 60 lbs. and work in an environment which may be loud, slick, humid, hot, or cold

-Maintain communication with supervisor on any issues, their development and foreseeable concerns

-Maintaining high standards for an organized, safe, clean, and otherwise pristine workplace in accordance with daily cleaning lists, company protocols mitigating contact of COVID-19, and USDA requirements for safe food handling

-Strong work ethic, a results-driven, team-oriented, positive attitude -Enthusiasm for and involvement in company growth and direction

-Key attributes include punctuality, excellent organizational, problem solving and time management skills, a sense of urgency for the task at hand and proper personal hygiene

-Schedule flexibility to meet distribution goals

We exercise the belief that local food is for everyone by providing nutrient rich produce to the food insecure; simultaneously reducing waste and increasing income to local producers. Three River Farmers Alliance has created a simple, efficient program for providing weekly donations from our generous contributors used to purchase excess crops at cost from local farms. We then distribute produce to local food pantries within our community. We use additional donations to supplement credits for SNAP eligible Veggie-Go customers ensuring all donations directly assist in the fight against hunger.
